Green Papaya Kosambari

It was an odd day. We bought green papaya thinking it was red sweet papaya. When cut open, realized that it was really a “green” papaya and not a red papaya. Not going to waste such pretty fruit, I prepared all-raw papaya kosambari by adding mung bean sprouts, onion, tomato and green chilli. Green papaya has cucumber like taste and made a fine appetizer to our afternoon meal.

Green Papaya Kosambari
(makes 4 servings)

Green Papaya – 1 small fruit. Half is enough for this recipe.
Red onion or shallot – 1
Green tomato – 1
Green chilli – 1
Mung sprouts – 1 cup
Salt to taste
Lime Juice to taste
Few coriander leaves

Cut green papaya and remove the seeds. Peel the skin. Cut the white flesh to bite sized cubes. About 2 cups.

Finely chop onion, tomato and green chilli.

Take them in a big cup. Add mung bean sprouts and coriander leaves. Sprinkle salt and lime juice. Combine. Serve.

    This is a meal by itself. Amma makes a kootu out of raw papaya but its very rare in our kitchen. The combo of mung sprouts makes it really healthy Indira!

    there is a Vietnamese movie called “Scent of a Green Papaya”. if you haven’t seen it you should. The cooking scenes are awesome, reminded me of hanging around the outdoor cooking area in my grandparents home. Anyway, one of the main characterin the movie uses a very rustic way to julienne the green papaya which would be perfect for your kosumbari.

    Recently from last year i started cooking raw papaya with some legumes like white batani or black chickpeas…it tastes more or less like sorakaya kura…just takes a little longer to cook….
    kosambari is a gr8 idea too

    Healthy salad. We normally make kootu with them. I usually grate them for salads or curd pachadi.

    Indira, This salad looks so yummy!!! I’ve read about green papaya being used for kurma or kootu, esp. when there’s no veggies at home. Never tried it myself. We had 2-3 papaya trees at home and I never gave it a second thought until I moved to N.America. It used to be one of the fruits I hated – mainly because of the smell. Now, I adore these yummilicious fruits. A few months ago, I ended up paying more than 10 bucks for one papaya and sure, my mom had a blast, laughing at me. Serves me right, I guess!

    Hey my mom makes a Thai-style green papaya salad out of a recipe we got out of Sailu’s food. Its addictive! DO give it a try. And I make pappu out of it using your pappu recipe. That comes out amazing too. When pressure cooked it has a superb sweetish taste .
